1 c. oil
1 c. firmly packed brown sugar
4 eggs, separated
2 tsp. allspice
2 tsp. cinnamon
1 tsp. cloves
2 tsp. salt
1 tsp. baking powder
3 c. flour
1 c. fruit juice
1 1/2 c. chopped candied cherries
1 c. shaved lemon and orange rind
1 c. chopped figs
1 c. chopped candied pineapple
1 c. raisins
3 c. chopped nuts


Mix oil, sugar, and egg yolks in large mixing bowl. Beat well for approximately 2 minutes. Sift allspice, cinnamon, and cloves together. Add salt, baking powder and 2 cups of flour. Add flour mixture alternately with the fruit juice to the first mixture. Mix 1 cup flour with the fruits and nuts. Add to the batter. Beat 4 egg whites until stiff. Fold beaten egg whites into the batter mixture. Pour batter into a 10 inch tube pan. Bake at 275° for 4 hours.
