1 20 oz. can pineapple chunks
2 c. tiny marshmallows
2 Tbsp. vinegar
1/2 c. sugar
1 beaten egg
1 Tbsp. flour
6-7 c. cubed, cored red or green apples
1 8 oz. tub frozen whipped dessert topping, thawed
1 10 oz. jar maraschino cherries, drained and halved


Drain pineapple, reserving juice. In a large bowl, stir together pineapple chunks and marshmallows, cover and chill for up to 24 hours. Meanwhile, for dressing, in a small saucepan, stir together the sugar and all purpose flour. Add reserved pineapple juice, vinegar and egg. Cook and stir over medium heat just until mixture bubbles, reduce heat. Cook and stir for 2 minutes more. Transfer the mixture to a small bowl. Cover the surface of the mixture with plastic wrap and chill. To serve, add chilled dressing, apples, dessert topping, cherries and peanuts to marshmallow mixture, stir to mix well.
