BETTY DANA'S PICKLE RELISH


ingredients

12 red peppers
12 green peppers
10 medium onions (don't run through hot water bath)
1 pt. vinegar
3 c. sugar
3 level Tbsp. salt
3 Tbsp. mustard seed

preparation

Grind onions first and put into a side dish. Remove pepper seeds and grind. Pour boiling water over peppers and let stand 5 minutes. Drain.

Make weak solution of vinegar and water (1 cup vinegar and 2 cups water). Put pepper and onion mixture into vinegar and water mixture and let come to a boil. Let stand for 10 minutes. Drain.

Add one pint of vinegar, salt, sugar and mustard seed. Boil 2 minutes, bottle and seal.
