Preheat oven to 350°. Toast oats in preheated oven until crisp and fragrant, about 10 minutes; set aside. Spray 2 large cookie sheets with nonstick spray. Sift together flour, baking soda, cinnamon and nutmeg on a sheet of wax paper. In a large bowl, stir together egg whites, sugars, oil, milk and vanilla. Stir in dry ingredients, oats and raisins. Drop by rounded teaspoonfuls 1 inch apart on cookie sheets. Bake 15 to 18 minutes. Yields 3 dozen cookies. One Serving Contains: 80 calories, 2.0 grams fat, 0.3 grams saturated fat, 0 milligrams cholesterol and 17 milligrams sodium. |
