CHEESY TURKEY RICE SQUARES


ingredients

1 1/2 c. chicken broth
3/4 c. uncooked long grain rice
4 oz. sharp process American cheese, shredded (1 c.)
2 Tbsp. butter or margarine
1/2 c. finely chopped, drained, cooked spinach
1/4 c. finely chopped green onions and tops
2 c. diced, cooked turkey
2 beaten eggs
1 1/2 c. milk
1 (10 3/4 oz.) can condensed Cheddar cheese soup
1/3 c. milk

preparation

Substituting chicken broth for water, cook rice according to package directions, omitting salt and butter. Stir cheese and 2 tablespoons butter into hot rice. Add spinach, onions and turkey and mix well. Beat eggs well. Add with 1 1/2 cups milk to rice mixture. Blend lightly. Turn into well-greased 12 x 7 1/2 x 2-inch baking dish. Bake at 350° about 40 minutes or until knife comes out clean. Cut in squares and serve with cheese sauce. To make cheese sauce, blend cheese soup with milk in saucepan and heat thoroughly. That's all there is to it!
