TURKEY-RICE SALAD


ingredients

3/4 c. water
3/4 c. quick cooking rice
1 c. peas
1/2 tsp. salt
1/4 c. mayonnaise
2 Tbsp. pickle relish
1 Tbsp. chopped onion
1 c. cooked cold turkey, diced
1/2 c. shredded Cheddar cheese

preparation

Bring water to a boil in a medium saucepan. Add rice, peas and salt. Stir to moisten. Remove from heat. Let stand for 15 minutes. Add mayonnaise, relish and onion. Fold to blend. Cover and chill thoroughly. Fold in turkey and cheese. Serve on lettuce leaf.
