"JAN'S" QUICK NAVY BEAN SOUP
1/2 onion, diced2 (15 oz.) cans navy beans8 oz. cooked smoked ham, diced1 clove garlic, minced3 Tbsp. olive oil1/4 c. fresh chopped parsley1 tsp. thyme2 c. chicken broth or chicken bouillon
Saute onion in olive oil. Add garlic and stir for one minute. Add ham; saute on low to medium heat for a few minutes. Add all remaining ingredients. Heat on medium for 5 minutes; reduce to simmer. Serve when hot. Serves 2 to 4.
