CRANBERRY APPLE OR BLUEBERRY APPLE MUFFINS
1 c. cranberries (fresh) or 1 c. blueberries1 egg1/2 c. milk1/4 c. salad oil1 1/2 c. all-purpose flour1/2 c. sugar2 tsp. baking powder1/2 tsp. salt1 apple, peeled and diced
Preheat oven to 400°. Beat egg; stir in milk and oil. Mix in remaining ingredients until moistened. Apple should be peeled and diced. Cranberries should be halved. (Batter should be lumpy.) Bake 20 minutes or until slightly browned. Makes 12 to 15 muffins. Enjoy!
