Abstract:     The volunteers for Hospice of the Regional Medical Center, the only non-profit hospice in Orangeburg, SC, have put together over 660 historical, traditional, regional, and health-conscious recipes. The cover features an original watercolor of our famed Edisto Gardens by renowned local artist Elsie Fogle.
With recipes for beef, pork, fish, seafood, and lamb, and nearly fifty recipes for just poultry, there is sure to be something new for every culinary artist.
For non-meat eaters, there are vegetarian dishes, cheese dishes, and rice dishes--even tofu. With two dozen soup recipes, both hot and cold, as many recipes for all kinds of sauces, over 40 salad recipes, and lots of recipes for appetizers and dips, this is the only cookbook you’ll need to host dinner parties from the most elegant black-tie affair to the most informal picnic or tail-gate party.
There are sixty cake recipes, dozens for cookies and candy, and almost fifty pie recipes. There are recipes for frozen desserts and enough chocolate recipes to satiate even the most devout chocoholic.
So whether you want to make fried green tomatoes or spinach quiche, peppermint divinity or stuffed Cornish hens, you’ll find it all here. Lots of nationalities are represented. There are dishes from Mexico, such as Salsa, Guacamole, and Taco Soup. There’s a popular beef dish called Bulgoli from Korea, and there are recipes that may or may not be from the countries they are named for, such as Japanese Fruit Cake, Jamaican Gingerbread, Central American Black Beans, Armenian Salad, and Czechoslovakian Bars.
There are lots of traditional Southern favorites, such as fried chicken, congeled salads, macaronia and cheese, and several for pound cake. There are recipes for punches and drinks, both hot and cold, and over a dozen recipes for preserves and pickles. You can learn how to make artichoke relish or how to pickle whole crab apples.
Breakfast has not been forgotten. There are Cottage Cheese Pancakes, Crock Pot Grits, and Breakfast Casserole, among many others. There are countless casseroles, soufflés, stews, and almost sixty recipes for breads, rolls, and pastries.
The“Friends of Hospice Cookbook” features many unusual side dishes, such as Braised Endive with Lemon, Fennel and Pears, and Shoe Peg Corn Salad. There are new twists on old favorites, such as Aunt Vinny’s Corny Cornbread, Shrimp and Corn Soup, Oven-Baked Carrot Fries, and Brownie Ice Cream Pie.
There are recipes for all kinds of vegetables and vegetable pies. There are recipes with unusual names such as Peach Foam, Pig Cake, Hobo Dinner, and a potent fruit salad called Tutti-Frutti. There’s even a recipe for happiness and one for elephant stew you have to read to believe.
This cookbook is a pleasure just to sit and read. Recipe Sample:     Casserole Brunch

6 slices white bread, coarsely torn
1 lb. bulk sausage, cooked and drained
1 cup shredded sharp cheddar cheese
6 medium eggs
2 cups milk
1 tsp. sal
1/4 tsp. pepper

Preheat oven to 350 degrees. Lightly grease 13X 9 baking pan or casserole dish. Place bread in bottom of pan; sprinkle sausage on top. Beat eggs, milk, salt and pepper in medium bowl with wire whisk. Pour over bread mixture in pan. Bake 40 to 45 minutes until set in center and lightly browned. Serves 8 and is good cut in portions and frozen for quick breafast later.
