BRIE EN COUTE

 

Ingredients

 

1 (7-inch) round plain Brie *

raspberry jam (amount will be up to taste of cook)

2 sheets puff pastry

1 egg, beaten

 

Description

 

*Do not use any other cheese, such as Camembert, as they will become liquid inside.

 

Slice the Brie in half and cover bottom half with raspberry jam; replace top.  Cover lightly with jam.  Place on a sheet of puff pastry and wrap over the top, trimming off excess.  Place a second sheet on top of round and wrap onto bottom half.  Seal dough to dough with a little of the egg.  If I have excess pastry dough, I like to cut out shapes (leaves, vines, bunches of grapes, hearts) and add them to the top.  Brush lightly with the egg.  Bake at 350 degrees for at least 30 minutes, keeping an eye on it.  It will puff up high, but this will start falling almost as soon as you remove it from the oven.  Serve with crusty slices of French bread.
