Presbytery Chicken

 

1 c. light mayonnaise

1 stick margarine, melted

2 to 3 Tbsp. Dijon mustard

3 lb. boneless, skinless chicken breasts

1 (16oz.) pkg. herb stuffing mix

 

     Mix mayonnaise, margarine and mustard together.  Put herb-stuffing mix in blender and process into fine crumbs.  Dip chicken breasts in mayonnaise mixture and roll in herb stuffing mix.  Place coated chicken in a shallow, ungreased baking dish.  Cover with foil and bake at 350 degrees for 1 hour.  Remove foil for the last 10 minutes to brown chicken.  Makes 8 to 10 servings.
