“Bobby Plump’s Favorite Pineapple Upside Down Cake”

 

1 can pineapple

1 c. brown sugar

2 Tbsp. butter or margarine

3 eggs – beaten until thick & creamy

1 ½ c. sugar

½ c. water

2 tsp. baking powder

vanilla to taste

1 ½ c. flour

 

Put first three ingredients in frying pan (I use iron). Let cook slowly a few minutes – mix the batter and pour over the fruit.  Bake at 350 degrees F. for 30-40 minutes.  Turn out on plate so fruit will be on top.
