Shrimp & Yellow Rice

 

1 Box Yellow Rice

1 Can Cream of Mushroom Soup

1 Can Tomatoes & Chilies   

1 ˝ Lb. Shrimp, Peeled & Deveined

1 Bell Pepper – Chopped

1 Onion – Chopped

 

Sauté onion and bell pepper in a little oil.  Cook rice as directed.  Add shrimp to onion and peppers and cook until shrimp are pink.  Add cream of mushroom soup and tomatoes and chilies.  Let simmer for a few minutes.  Pour in a casserole dish and bake at 350 degrees for 30 minutes.
