Corn Meal Cake

 

1 C. Butter

½ C. Shortening

2 Eggs – well-beaten

1 tsp. Ginger

1 tsp. Nutmeg

1 tsp. Salt

1 C. Cornmeal

1 tsp. Baking Soda

½ C. Sugar

1 tsp. Cinnamon

½ C. Boiling water

½ C. Cane Syrup

¾ C. Plain Flour

 

Cream shortening, butter, sugar, salt and spices until light and fluffy.  Add well-beaten eggs and blend thoroughly.  Add syrup alternately with meal and flour, beating well after each addition.  Dissolve soda in boiling water and add to mixture.  Mix well. Bake in cake pans, loaf pans or 9 x 13 pan at 350 degrees until done.
