Harvest Apple Cake

4 c. apples – chopped

2 c. white sugar

3 c. flour

2 tsp. baking soda

1 c. oil

1 c. raisins

1 tsp. cinnamon

2 eggs

1 tsp. vanilla

1 c. chopped nuts – any kind

1 tsp. nutmeg

Mix apples and sugar in a large bowl and let stand for one hour.  Add remaining ingredients; mix by hand. Pour into greased and floured Angel Food Cake Pan – bake @ 350 degrees for one hour.
