Mrs. Tawes' Maryland Crab Cakes

Ingredients:

1 (1 lb) can bakefin or lump crab meat

2 eggs

2 Tbsp. mayonnaise

1/4 tsp. salt

1/8 tsp. pepper

5 drops Tobasco

1 Tbsp. chopped fresh parsley (or dried)

cracker crumbs

fat for frying

Directions:

With your fingers, go through the crab meat thoroughly. pick out and bits of shell or orange particles. Now combine all ingredients, except crumbs and fat, and mix lightly. Form into desired size cakes or roll gently in the crumbs. Fry in 1 1/2 inches of hot oil in iron frying pan. Allow 1st side to brown nicely before turning over. Fry to golden brown. Remove and drain in paper towels. serve immediately. Offer mustard or catsup. Serve with cole slaw.

*Mrs. Tawes was the wife of former Governor of Maryland. They grew up and lived all their lives in Crisfield, Maryland, the seafood capitol of the world.
