MUSHROOM AND RICE SIDE DISH
1 medium onion, diced6 tbsp butter1 c Uncle Ben's converted rice1 can beef consomme soup1 c water1 large can mushrooms salt and pepper to taste
Sauté onion and butter until brown. In a casserole bowl, mix rice, soup, water, mushrooms, salt and pepper. Bake at 300° uncovered about 1 hour or until rice is cooked.
