KOOKOO-E-SABZI


ingredients

2 lb. (approximately) mixed herbs (can be any or all: cilantro, spinach, parsley, dill, green onion ends, chopped garlic)
4 Tbsp. cooking oil, divided
4 large eggs, beaten
1/2 tsp. salt
1/4 tsp. black pepper
1 Tbsp. wheat flour
1 Tbsp. baking soda
1 Tbsp. walnuts, crushed (optional)

preparation

Wash herbs and rinse thoroughly. Chop finely.

In a skillet, heat 2 tablespoons of oil and sauté herbs for about 5 minutes. Let cool completely.

In a bowl, beat eggs well. Add salt, pepper, flour, baking soda and walnuts. Add fried herbs and mix well.

In a large nonstick pan, heat remaining 2 tablespoons of oil until hot. Pour in mixture and flatten the surface with the back of a spoon. Cover. Reduce heat and fry for about 10 minutes until Kookoo is cooked. Turn over and cook other side for another 10 minutes. Remove to a plate and cut into 4 equal pieces. Can serve warm or cold.
