1 can black eye peas
1 can black beans
1 can hominy, yellow or white
1 can rotels or diced tomatoes and jalapeno peppers
chopped green onions - to taste
chopped bell peppers - to taste
fresh garlic and parsley (optional)

Drain first four ingredients. Mix with creamy Italian dressing, chill overnight and serve with tortilla chips.
