APPETIZER MEATBALLS IN SAUCE
(Served In Your Choice of Sauce)

ingredients

2 lbs. ground chuck or lean ground beef
1/2 c dry bread crumbs
1/2 c. milk
2 eggs
1 1/2 tsp. salt (or part garlic salt)

preparation

Preheat oven to 500 degrees.

Combine the meat, crumbs, milk, eggs and salt in a bowl. Mix lightly to blend. Shape the meat into balls about the size of large marbles. Arrange on shallow baking pans. Put into preheated oven for 4 to 5 minutes, or until lightly browned. Remove and add to the prepared sauce of your choice; include any pan juices. Cool, then refrigerate until time to serve.

Reheat meat and sauce together over low heat; keep warm in chafing dish or over candle warmer. Provide toothpicks or bamboo skewers for spearing the meatballs, and plenty of small paper napkins. Makes about 100 meatballs.

For a large group you can easily prepare these tiny meatballs to serve hot in your choice of sauce such as: Sweet and Sour, Curry, Stroganoff or Teriyaki. (See sauces in section on Sauces.)
