BELGIAN CHERRY COOKIES


ingredients

1 c. softened butter
1/2 c. confectioners sugar
1 tsp. almond extract
2 to 3 Tbsp. milk
2 1/2 c. sifted cake flour
1/2 c. finely chopped pecans
6 oz. jar maraschino cherries, drained and cut in half

preparation

Mix butter, sugar, extract and milk. Blend in flour and mix in nuts. Chill dough. Heat oven to 400°. Roll dough into 1-inch balls and insert cherry half into center of ball. Bake 10 to 12 minutes on ungreased baking sheets until set, not brown. While warm, roll in confectioners sugar, cool and roll again.
