Steam yams in 1/2 cup water in pot with tight fitting lid until tender (15 to 20 minutes). Peel and slice potatoes and layer them in a casserole. Pour small amount of melted butter or margarine over yams. Peel and core apples, slice 1/2-inch thick, layer on top of yams. Sprinkle raisins over top of apples. Heat apple juice to boiling. Combine cornstarch and 3 tablespoons of water, add to juice, cook until sauce is clear and thick. Add honey to sauce. Pour over apples and then top casserole with wheat germ. Bake in a 350° oven until apples are tender, about 30 to 45 minutes. Serve with fat-free Cool Whip. |
