6 catfish fillets
1/3 c. lime juice
1/4 c. olive oil
1/8 tsp. salt

Mix ingredients and pour over fillets. Marinate at least 15 minutes. Brush grill with salad oil and grill catfish over medium-hot coals for 7 to 8 minutes per side. Spoon salsa over fish and serve.

4 large tomatoes, diced
1 white onion, diced
1 or 2 serrano or jalapeno peppers, seeded and diced
1 clove garlic, crushed
1/4 c. cilantro, minced
2 Tbsp. fresh lime juice
1/2 tsp. cumin
salt and pepper to taste

Mix all ingredients together and allow to set for at least one hour.
