Brush bread lightly with melted margarine. Sprinkle evenly with one-third of the sugar substitute and cinnamon. Cut bread slices into quarters. Layer bread and raisins in a 1 1/2-quart casserole coated with cooking spray. Combine eggs, milk, vanilla and remaining two-thirds of sugar substitute. Pour over bread and raisin dish. Place dish in a baking pan containing 1-inch of hot water. Bake at 350° for 55 minutes to one hour or until knife inserted in center comes out clean. Serve warm or chilled. Yield: 8 servings. |
