MY FAMOUS BROCCOLI-FRIED RICE


ingredients

7 slices smoked bacon (I prefer thick and peppered)
1 large Spanish onion
1/2 c. Uncle Ben's converted rice (no substitutes)*
1 small head broccoli
water
soy sauce
pepper to taste

preparation

*I know you will be tempted to use Minute rice or some substitution, but you will be sorry. It turns to mush and you will have mashed fried rice!

Rice: In a saucepan that has a lid, put 1 1/3 cups of cold water. Bring it to a good boil. Add 1/2 cup of rice, NO SALT. Stir once, reduce heat to simmer; cover and simmer for 20 minutes. Set aside.

Slice the bacon into bite sized pieces and fry in a large frying pan or wok until very crisp and brown. Drain half the fat, leaving the bacon in the pan. Chop the onion into bite-sized pieces (fairly large). Add to the pan with bacon and fry until it begins to sweat.

Rinse the broccoli and cut into bite sized pieces (fairly large). Add to the pan with the bacon and onion and 2 tablespoons of water. Steam, covered, until the broccoli is crisp-tender. Fluff the rice with a fork and add to pan with other ingredients. Fry on high heat, stirring constantly for about 2 minutes. Add soy sauce to taste. (It is better to add it a little at a time as it can get very salty. Start with 10 quick shakes, then taste. The rice will absorb some of the sauce so it is a good idea to taste it again after about 5 minutes.) Pepper as desired and serve hot!
