PEANUT BARS


ingredients

4 egg yolks
1/4 tsp. salt
2 c. sugar
1 tsp. vanilla
2 c. sifted all-purpose flour
3 tsp. baking powder
1 c. cold water
4 egg whites

preparation

Beat egg yolks, salt, vanilla and sugar about 5 minutes. Sift flour once with baking powder; add to egg mixture, alternating with cold water, beating at "blend" speed to mix smooth after each addition. Beat egg whites until they hold stiff peaks, but are not dry. Gently fold in with rubber spatula the egg whites in batter. Pour into 9 x 13 cake pan lined with wax paper; do not grease or flour. Bake at 350° for 25 minutes. Cool; cut in pieces your choice of size, approximately 1 x 2 1/2-inches. Frost with Peanut Bar Frosting.

Peanut Bar Frosting:

ingredients

2 lb. confectioners sugar
2 sticks margarine
2 tsp. vanilla (pure vanilla; optional)
dash of salt
water (enough to spread easy, approximately 2 to 4 Tbsp.)

preparation

Mix sugar, margarine, vanilla and a dash of salt. Add small amounts of water until you reach an easy spreading consistency; spread icing on all sides and ends of bars. Roll in very fine ground nuts (regular salted, approximately 1 gallon can peanuts).
