3 beaten eggs
2 onions, finely chopped and sauteed
3 c. scalded milk
1 lb. grated Cheddar cheese
1 stick melted margarine
1 small pkg. saltines (1 row)
paprika (optional)
1 tsp. curry powder (optional)
salt (optional)


Preheat oven to 350°. Scald milk; set aside to cool. Crumble saltine crackers and add melted margarine and curry powder. Line a 9 x 13-inch pan with cracker mixture. Top with onions. Add beaten eggs, salt and grated cheese to milk. Pour milk sauce over crackers and onions. Top with Parmesan cheese and paprika. Bake for approximately 40 minutes or until set.
