Stir together cereal and buttermilk and let stand 5 minutes. Add egg, sugar and vegetable oil, mixing well. Combine the rest of the ingredients in a large bowl, stirring well. Add to cereal mixture and stir until dry ingredients are moistened. Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan that has been sprayed with vegetable cooking spray. Bake at 350° for 45 to 50 minutes; a wooden pick inserted in center should come out clean. Cool 10 minutes in pan before removing. Yields 15 servings.
