WEDDING SOUP


ingredients

meatballs, dime sized
1 egg
1 small onion, diced
1/2-1 c Italian bread crumbs
1/4 c parmesan cheese, grated
1 lb ground beef
3 tbsp parmesan cheese, grated
48 oz can chicken broth
1/2 c acini de pepe pasta
1/2 c chopped frozen spinach

preparation

Cook meatballs as you normally would. Keep rolled small. Warm broth. Add chopped spinach and boil. Add precooked meatballs. Reduce to slow simmer. Add acini de pepe until they are fully cooked. Add 3 tbsp grated cheese and serve.
