WEDDING SOUP
meatballs, dime sized1 egg1 small onion, diced1/2-1 c Italian bread crumbs1/4 c parmesan cheese, grated1 lb ground beef3 tbsp parmesan cheese, grated48 oz can chicken broth1/2 c acini de pepe pasta1/2 c chopped frozen spinach
Cook meatballs as you normally would. Keep rolled small. Warm broth. Add chopped spinach and boil. Add precooked meatballs. Reduce to slow simmer. Add acini de pepe until they are fully cooked. Add 3 tbsp grated cheese and serve.
