SPINACH DIP
1 c. chopped fresh spinach1 c. low-fat cottage cheese1/2 c. chopped green onions1/2 c. lite mayonnaise1 Tbsp. reduced sodium soy sauce1 clove garlic, minced sweet red pepper strips
Combine first 6 ingredients in electric blender. Process until smooth. Cover and chill. Garnish with red pepper strips. Serve with raw vegetables. Yields 1 2/3 cups.
