BLUEBERRY COBBLER


ingredients

1/3 to 1/2 c. sugar
1 Tbsp. cornstarch
3 c. blueberries
4 tsp. lemon juice
1 tsp. lemon peel
1 tsp. cinnamon
1/8 tsp. salt
Cobbler Topping

preparation

Combine sugar and cornstarch in saucepan; add blueberries, lemon juice, lemon peel, cinnamon and salt. Cook and stir over medium heat for 4 to 6 minutes or until thickened. Place in 4-cup baking dish. Spoon Cobbler Topping over fruit mixture. Bake at 375° for 15 to 20 minutes or until golden brown. Serve warm with ice cream or whipped cream.

Cobbler Topping:

ingredients

1 c. flour
3 Tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. each: cinnamon and salt
1 beaten egg
1/3 c. milk

preparation

Stir together flour, sugar, baking powder, cinnamon and salt. Combine egg and milk; stir into dry ingredients just until moistened.
