1 lb. grated Monterey Jack cheese
1 lb. Cheddar cheese, grated
6 eggs, beaten lightly
1 (12 oz.) can evaporated milk
1/2 c. pepper and onion relish, drained*
2 cans (4 oz.) chopped green chilies, well drained

*Harry and David's makes pepper-onion relish.

Preheat oven to 350°. In a large bowl, combine the cheese, eggs, milk and relish. Line a 9 x 13 pan with the chilies. Pour the cheese mixture over the chilies and bake at 350° for 40 minutes. Cool for 5 minutes before cutting into small squares. Serve warm or at room temperature.
