LASAGNE


ingredients

1 lb. Sweet Italian Sausage
1/2 Chopped Onion
1 Clove Garlic, minced
1 1/3 c. Tomato Paste (2, 6 oz. cans)
1 2/3 c. Water
1 tsp. Oregano
1/2 tsp. Basil
1 Egg, slightly beaten
1 pkg. Frozen, Chopped Spinach (cook about 7 min. in micro)
2 c. Ricotta Cheese
1 c. Grated Parmesan Cheese
1 1/2 c. Shredded Mozzarella Cheese, reserve 1/2 c. for top
1/2 tsp. Salt and Pepper
12 Cooked Lasagne Noodles

preparation

BROWN: sausage, garlic and onion.

ADD: water, paste and spices. Simmer 20 minutes.

COMBINE: egg, spinach, cheeses and salt & pepper.

IN AN OBLONG GLASS PAN LAYER THE THREE. Start with 3 or 4 noodles on the bottom of the dish. Cover with 1/2 the egg, cheese mixture. Pour sauce over. Then four more noodles, rest of egg, cheese mixture, sauce. Top with the remaining noodles and sauce and finally the mozzarella.

Bake covered 350° for 30 min., then uncovered 20-30 min. more.

Sometimes I bake ahead just 30 minutes and then the day I serve just heat for 30 minutes more. Can also be forzen at that stage.
