CRANBERRY APPLE OR BLUEBERRY APPLE MUFFINS


ingredients

1 c. cranberries (fresh) or 1 c. blueberries
1 egg
1/2 c. milk
1/4 c. salad oil
1 1/2 c. all-purpose flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 apple, peeled and diced

preparation

Preheat oven to 400°. Beat egg; stir in milk and oil. Mix in remaining ingredients until moistened. Apple should be peeled and diced. Cranberries should be halved. (Batter should be lumpy.) Bake 20 minutes or until slightly browned. Makes 12 to 15 muffins. Enjoy!
