Tropical Carrot Cake
Ingredients:
3 eggs
¾ c. vegetable oil
¾ c. buttermilk
2c. all purpose flour
2 c. sugar
2 tsp. Baking soda
2 tsp. Ground cinnamon
½ tsp salt
2 tsp vanilla
2 c. finely shredded carrots
1 c. raisings
1 can (8 oz.) crushed pineapple undrained
1 c. chopped walnuts
1 c. flaked coconut
Directions:
In large mixing bowl beat eggs, oil and buttermilk. Combine flour, sugar, baking soda, cinnamon and salt. Add to too mixture and mix well. Stir in vanilla, carrots, raisins, pineapple, walnuts and coconut: mix well. Pour into greased 12 x 9 x 2 inch baking pan. Bake at 350 degrees for 45-50 minutes or until done. Cool
Frosting:
1 pk. (8 oz.) cream cheese softened
1 to 2 Tbsp heavy cream
4 to 4 ½ c. confectioners sugar
1 tsp. Vanilla extract
beat all ingredients in a mixing bowl till smooth. Frost cake
