Ingredients:
6 tbsp. Butter
1 cup light brown sugar
1-1/4 cups milk
4 Tbsp. Flour
½ Tsp. Salt
4 eggs separate yolks, beaten
4 egg whites
2 cups milk
1 tsp. Vanilla
2 8-inch pie shells-cooked
3 tbsp. White sugar
Directions:
Over low flame melt 4 tbsp. Butter and stir in flour. Slowly add 2 cups milk, stirring continuously. Add egg yolks only to mixture, stirring constantly or the mixture will burn. Add salt and vanilla extract. When mixture thickens to pudding consistency. Remove from heat and pour into cooked pie shells.
Meringue:
Beat egg whites on high speed with 3 tbsp. of white sugar until peak
form.
Spread over top of pie and bake at 350 degrees for about 15 minutes
or until meringue turns a golden brown.
