Mom's Old Fashioned Hot Chow-Chow


Ingredients:
1 gal. green tomatoes
3 lb.. cabbage
2 lb. onions
1 doz. bell peppers (6-red, 6-green)
1 Tbsp whole mixed allspices (tied in a clean cloth)
3 lb.. sugar
6 hot peppers
1/2 gal. red apple cider vinegar
1 Tbsp each salt, black pepper, ground allsipce and paprika

Directions:
Grind tomatoes separately; add salt and let stand 30 minutes, while you grind green peppers, hot peppers cabbage and onions, dissolve sugar in vinegar.  Put spices tied in cloth in the sugar and vinegar.  Mix all together and cook 20 -30 minutes.  Remove spices tied in cloth and discard.  Spoon into sterile jars and seal tight.

Note: Red peppers give color to the chow-chow if not hot enough add more hot peppers.
