Southwest Potato Salad

Ingredients:

5 potatoes, boiled and peeled

5 eggs, boiled

1 can diced green chilies

1 onion, chopped

1 pound bacon, crispy

grated Longhorn Cheese

salt and pepper to taste

mayonaise

 

 

Directions:

Boil potatoes with skins on until tender.  Boil eggs. Cool, peel, then chop potatoes and eggs into a bowl.  Add green chilies, onions, crumbled bacon, longhorn cheese (as much as you like) and salt and pepper to taste.  Add mayonnaise, a little at a time, until desired consistency is reached. Refrigerate
