Turtle Cookies

 

Ingredients:

Cookie:

½ cup butter

2/3 cup sugar

1 egg, separated

2 Tbsp. milk

1 tsp. vanilla

1 cup all-purpose flour

1/3 cup cocoa

¼ tsp salt

1 cup chopped pecans

 

Caramels:

14 light caramels

3 Tbsp. whipping cream

 

Chocolate:

½ cup chocolate chips

½ tsp. shortening

 

 

Directions:

Beat butter, sugar, egg yolk, milk and vanilla. Add flour, cocoa and salt. Chill one hour. Shape dough into 1 inch balls, dip in slightly beaten egg whit and roll in pecans. Place on greased baking sheet; make thumbprint in center of each. Bake in preheated 350 degree oven 10-12 minutes. Remove from oven, immediately repress thumbprint in center of each. Melt caramels and whipping cream over low heat, stirring often, until caramels melt. Spoon1/2 tsp. caramel into each cookie. Melt chocolate with shortening over low heat. Stir until smooth. Drizzle over cookies.
