Chicken Olivia

 

3 cups chicken - cooked & chopped

2 stalks celery – finely chopped

1 medium onion – chopped

1 cup cream of chicken soup – undiluted

¾ cup mayonnaise

1 can sliced water chestnuts – drained & cut into small pieces

1-cup rice – cooked

½ stick margarine

1 sleeve of Ritz crackers

 

Melt ½ stick margarine and mix with 1 sleeve crushed Ritz crackers – this will be the topping - Then mix remaining ingredients and put into 9 x 13 casserole dish.  Spread crackers on top and bake @ 350 degrees for ½ hour.
