Dessert Enchiladas

 

Ingredients:

2 cans apple or peach pie filling

8-6inch flour tortillas

½ c. sugar

2 c. sour cream

2 eggs, beaten

2 tsp cinnamon

 

Directions:

Heat oven to 350 degrees.  Grease a 13x9 inch baking dish.  Spread ¼ of a can of pie filling down the center of each tortilla and toll it up.  Place in baking dish seam side down.  In a separate bowl, mix the last four ingredients and blend until well mixed.  Pour over the tortillas, making sure they are completely covered.  Bake for 25 minutes or until set.  Best served warm with whipped cream.
