Daddy’s Meatballs (pg. 30)

 

Ingredients

 

3 lbs. Ground beef

½ lbs. Ground pork

½ c. Raisins, chopped

1 large garlic pod

3 heaping Tbsp. parsley

2 eggs

½ c. Milk

1 c. Italian Bread Crumbs

1 ½ Tbsp. salt

½ Tbsp. pepper

¼ tsp. Allspice

½ c. Parmesan cheese

1 bell pepper, chopped fine

 

Directions

 

Chop together raisins and garlic.  In large bowl combine all ingredients and mix well.  Form into balls and place on cookie sheet.  Brown in oven at 325 degrees for 10 to 20 minutes.  Remove from oven and place meatballs on wire rack to cool.  When cool you may freeze on rack and when frozen place in freezer bags.  Take out as needed.

Yeild 30 to 36 meatballs.
