Pork with Red Plum Sauce

 

Ingredients

 

1 (2-4 lb) pork loin

¼ tsp. Onion salt

¼ tsp. Garlic salt

1 cup water

1 (10 oz.) jar red plum preserves

½ c. Brown sugar

1/3 c. Chili sauce

2 tbsp. lemon juice

2 tsp. Mustard

3 drops hot sauce

 

Directions

 

Several hours before cooking or the night before, sprinkle pork loins with onion salt and garlic salt.  Refrigerate until ready to cook.  Combine remaining ingredients in a medium saucepan.  Cook over medium heat for 15 minutes, stirring frequently.  Pour half of sauce over pork loin.  Cover with aluminum foil and bake until a meat thermometer inserted in thickest portion of meat registers 160 degrees.  Baste with remaining sauce during cooking.  You mush remove foil for the last 15 minutes to brown if desired.  Transfer loin to serving platter and let stand 10 minutes before serving.  Spoon sauce from baking pan over roast before slicing.
