Oreo Cheesecake

 

1 C crushed Oreos (12 to 15 cookies)

1 Tbsp margarine- melted

4 Pkgs (8 0z each) cream cheese – softened

1 C sugar

1 tsp vanilla

4 Eggs

20 Oreo Cookies – quartered

Cool Whip – optional

 

Mix crushed cookies and margarine – press on to bottom of 9-inch spring form pan.  Bake at 325 degrees for 10 minutes.  (Bake at 300 degrees for 10 minutes if using a dark nonstick spring form pan.)  Mix cream cheese, sugar, and vanilla with mixer on medium speed until well blended.  Add eggs mix on low speed until blended.  Gently stir in quartered cookies.  Pour over crust.  Bake at 325 degrees for 1 hour or until center is almost set -  Run knife around pan to loosen – cool - then remove rim.  Refrigerate for approximately 4 hours.  Add cool whip if desired.
