Peach Cobbler

 

2-32oz peaches                                                            Piecrust

3 C sugar                                                                     2 ½ C flour

½ C flour                                                                      1 C shortening

2 T. Nutmeg                                                                 ¾ C ice water

1 stick margarine                                                          ¼ T salt           

                                                                                    1 T. vanilla

 

Put in large pot- peaches, ½ C flour, sugar and nutmeg. Mix well. Place on top burner at medium heat until filling begins to thicken.  Set aside. Mix pie crust: in large bowl, put flour and shortening and salt – take two large cooking spoons and mix flour and shortening, salt until crumbly – add water with vanilla to flour mixture until forms a ball – sprinkle flour on board and knead.  Roll to fit pan 9x13 – Put one curst on bottom and sides – then put second crust on top.  Cut margarine on top and sprinkle with sugar.  Bake at 375 degrees for approximately 1-½ hours.
