Amaretto Cake

 

1 yellow cake mix with pudding in the mix

½ C milk

½ C amaretto

½ C water

½ C vegetable oil

4 eggs

1 C pecans – chopped (optional)

 

Amaretto Glaze

1 ½ sticks butter

1 ½ C sugar

¼ C water

¾ C amaretto

 

Grease and flour bundt pan – set aside – preheat oven to 350 degrees – mix yellow cake mix, milk, amaretto, water, vegetable oil and eggs.  Beat for 5 minutes scraping bowl often – pour into bundt pan and bake for 1 hour – when done immediately invert onto large plate and slice into 1-inch slices – optional: pour 1 cup chopped pecans into pan before adding batter –

Amaretto Glaze:

Place all ingredients except ¾ cup amaretto into saucepan and heat until sugar is dissolved and butter is melted – bring to steady simmer – continue to simmer for 5 minutes, stirring occasionally – remove from heat - slowly stir in amaretto – immediately pour onto sliced cake while both are still hot – cake will absorb all the glaze – allow to cool before serving.
