Wanda Paul’s Baked Chicken Sandwiches

 

16 slices white bread

1 stick margarine

¼ lb fresh mushrooms (I use more)

2 Tbsp butter

2 C white meat chicken – cooked and diced

3 hard boiled eggs – chopped

1/3 C ripe olives – sliced (I use more)

¾ C mayonnaise

2 Tbsp onion – chopped

1 can cream of chicken soup

1 C sour cream

2 Tbsp dry sherry

paprika

 

Trim crusts from bread – butter both sides of bread – place 8 slices in a 9 X 13 pan – sauté mushrooms in butter – cover bread with mixture of mushrooms, chicken, eggs, olives, mayonnaise and onions – arrange remaining 8 slices of buttered bread on top of mixture – combine soup, sour cream and sherry – pour over sandwiches – sprinkle with paprika – bake @ 325 degrees for 30 minutes or until hot and bubbly.
