Ugly Duckling Cake
Ingredients:
1 box yellow cake mix
1-(3 ½ oz) box instant lemon pudding
1 c coconut, flaked
1-16oz can fruit cocktail w/juice
4 eggs
¼ c. vegetable oil
½ c. brown sugar
1/2c. chopped nuts
Glaze:
½ c. margarine
½ c. sugar
½ c. evaporated milk
1 ½ c. coconut
Directions:
Blend cake mix, pudding mix, coconut, fruit cocktail, eggs and oil together in a large mixing bowl. Beat 4 minutes at medium speed. Pour into a greased 9x13 inch baking pan. Sprinkle with brown sugar and nuts. Bake at 325 degrees for 45 minutes or until done. Do not under bake! Cool 15 minutes. Prepare glaze while cake is cooling to prepare, combine margarine, sugar and milk in saucepan. Bring to a boil and boil for 2 minutes. Stir in coconut. Spoon hot glaze over warm cake.
