Spinach Mandarin Salad

 

 

1 pkg fresh spinach

1 bunch fresh romaine lettuce (chopped)

1 head of iceberg lettuce (chopped)

2 cans mandarin oranges (drained)

1 red onion (thinly sliced – break into rings)

pecans (toasted)

dressing:

1 C. vegetable  oil

1 ¼  C. apple cider vinegar

3 C. sugar

3 T. poppy seeds

 

Layer above ingredients, mix dressing ingredients completely till dissolved (do not heat).  Add to salad at the last minute because it wilts quickly.
