Apple Cobbler
Ingredients:
6-8 fresh tart apples, peeled and sliced ¼ inch thick (I prefer Granny Smith)
1 ½ c. sugar
½ c. brown sugar
1 Tbsp Flour
Juice of one lemon, strained
1 tsp cinnamon
1 tsp nutmeg
2 Tbsp butter ( melted and cooled to room temperature)
2 Tbsp cold water
Directions:
Combine sliced apples with sugars, cook until tender, set aside. Mix flour, lemon juice, cinnamon, nutmeg, butter and cold water. Then combine both mixtures in oblong pan. Pile without packing strudel crumb topping on top.
Strudel Crumb Topping:
2/3 c. flour
¼ c. butter
½ c. sugar
½ c. brown sugar
½ tsp cinnamon
¼ tsp nutmeg
Cut butter into flour with fork or pastry cutter. Add remaining ingredients. Use immediately
Bake in preheated oven 425 degrees for 10 minutes. Reduce heat to 325 and bake for 45 minutes to one hour. Remove from oven and cool. While still warm, drizzle the glaze over the cobbler
Glaze:
1 cup powdered sugar mixed with 2 Tbsp fresh lemon juice
